Quick and Easy, Healthy Baked Oatmeal Recipe with Berries: A Delicious Breakfast!

This is our go-to breakfast recipe when we want a little break from eating eggs for breakfast. It’s quick, full of whole ingredients, packed with protein and a crowd pleaser. I hope you love it!

If you’re looking for a simple and fast breakfast, this berry baked oatmeal is the best! And, it’s a great feeling as a mama to fill hungry bellies with nourishing ingredients.

There’s nothing more comforting than a warm breakfast. We needed something other than eggs and this recipe was an absolute hit with my husband and kids.

Oatmeal is high in protein and this recipe also contains eggs and milk. When we make this recipe, we are full until lunch!

Stovetop oatmeal is just not our favorite. And this berry baked oatmeal almost feels like eating cake for breakfast. It’s just so delicious. I hope you try it!

Variations

This recipe will change to fit your families’ preferences so easily. If you do not prefer milk, you can substitute almond milk.

Any kind of berry will do. We prefer blueberry, or a berry mix. Experiment and see what your family likes. Peaches would also be delicious!

For an extra dose of nourishment and crunch, add some pecans or walnuts. I haven’t tried this yet, but I’m thinking it’s definitely time. Anyone else love pecans?

Ingredients
  

  • 3 cups oatmeal
  • 2 tsp baking powder
  • 1 tsp sea salt
  • 2 cups milk
  • 1/2 cup maple syrup or honey
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups fresh or frozen berries/fruit

Instructions
 

  • Preheat oven to 375 degrees.
  • In a 9×13 baking dish, add oatmeal, baking powder and salt.
  • In a medium bowl, add milk, eggs, vanilla and maple syrup. Mix well
  • Add the wet ingredients to the oatmeal and mix well.
  • Add your choice of berries or fruit to the top.
  • slice pats of butter and dot around the oatmeal and fruit (use the amount of butter you’d like – I usually add 3-4 tbsp)

Instructions:

  • Preheat the Oven
    Preheat your oven to 375°F (190°C) so it’s ready when you are.
  • Combine the Dry Ingredients
    In a 9×13-inch baking dish, add the rolled oats, baking powder, and salt. Give it a gentle stir to combine. This saves you from using an extra bowl!
  • Whisk the Wet Ingredients
    In a medium mixing bowl, whisk together the milk, eggs, vanilla extract, and maple syrup until smooth and well combined.
  • Mix Wet and Dry Together
    Pour the wet mixture into the baking dish over the oats. Stir gently until everything is well mixed.
  • Add the Berries or Fruit
    Sprinkle your favorite fresh or frozen berries evenly over the top of the oatmeal mixture. You can use a single type of berry or a mix!
  1. Dot with Butter
    Slice 3 to 4 tablespoons of butter into small pats and scatter them evenly over the top of the berries. This adds a rich flavor and helps the top turn golden as it bakes.
  2. Bake
    Place the dish in the oven and bake for 35–40 minutes or until the oatmeal is set and the top is lightly golden.
